It's all about quinoa today! I LOVE quinoa! It took me a million years to learn how to pronounce it though. Nevertheless, there are so many benefits to this little superfood, including a crazy amount of protein! It has so many vitamins and health benefits and isn't a filler carb like white rice or white bread. I use it all the time as a couscous or rice replacement. However, there are other ways to eat this amazing grain.
Sometimes, I want all the benefits of quinoa, but don't want something heavy. I just want something light without compromising flavor of course. When I discovered Le Pain Des Fleurs Organic Quinoa Crispbread, I knew I was in for a treat. So here are two recipes I hope you love as much as I do.
Feta Caprese Salad on Quinoa
- 2 quinoa crispbreads
- Two slices tomato
- Feta
- Basil leaves
- Sea salt
- Olive Oil (optional)
Cut up your tomato and place it on top of the crispbreads. Sprinkle some sea salt on top and lay the basil leaves on top of the tomato. Crumble some feta on top and drizzle with olive oil if you want! It's that simple! Typical caprese salad uses mozzarella. However, I wanted to use feta for this recipe because it has such a pungent flavor and isn't as heavy as mozzarella. So you can enjoy your flavorful caprese on quinoa without feeling heavy or weighed down!
Minted Berries with Ricotta and Honey on Quinoa
- 2 quinoa crispbreads
- Fresh ricotta
- Berries of choice
- Fresh mint leaves
- Honey
Spread fresh ricotta on the crispbreads. Cut up berries and place them on top. You can use any berries you prefer, but I chose the standard strawberries and blueberries. Chop up 1-2 mint leaves and sprinkle them on top. Finish with drizzled honey and garnish with a mint leave.
