Red Berry and Dragon Fruit Cheesecake Smoothie Bowl

Smoothie bowls are all the rage today. I used to just make plain old smoothies, but I was curious to see what the attraction to put them in a bowl was.

Now, I don't think I'll ever look back. I like to chew my meals, not just drink them. With smoothie bowls, I feel like I'm getting all the benefits smoothies offer, but I love being able to get creative and add different toppings.
















I wanted to create a smoothie bowl unlike any other. I didn't want it to be the typical banana or blueberry. I wanted it to be decadent, like you're not even eating something healthy. That's when I came up with this red berry and dragon fruit cheesecake smoothie bowl.

When I was younger, I used to love going to the store with my dad. He would let me pick out all of this exotic food even though I couldn't even pronounce the name most of the time! Over the weekend, I went to the store and did just this. Before I knew it, I had a beautiful dragon fruit in my cart.
























I have heard so much about this superfood and couldn't wait to try it. Besides all of the mind blowing nutritional benefits, just take a second to soak up all the beauty of this fruit. I mean wow! This is a pretty food! However, as much as I love it, it definitely lacks flavor. It's refreshing, but doesn't have much taste. I paired it with flavorful red berries and fresh ricotta to create a combination you won't be able to resist. 

Ingredients:
  • 1 cup frozen red berries (I used raspberries and strawberries)
  • 1/2 cup dragon fruit
  • 1 teaspoon raw honey
  • 1/4 teaspoon vanilla extract
  • 1/3 cup ricotta cheese
  • Dash of sea salt
  • Toppings of choice
Toss everything into a blender and blend until smooth. Put into a bowl and add toppings of choice. That's it!

























This recipe is so easy! It takes all of five minutes from start to finish.








































To make this dish even more aesthetic, I served it in the dragon fruit. The toppings I used were dragon fruit balls, fresh strawberries, chia seeds, and granola. You can really add anything you want on top though, just get creative!
