Mashed potatoes. Who doesn't love them?
They were one of my favorite foods as a kid. I was convinced that I was healthy because potatoes were a vegetable in my mind. Now that I've grown up, I've come to know the sad truth: potatoes are not an extremely healthy vegetable. They are a starch and a carb that turns to sugar and should be limited. Although they do have many health benefits, people do not consume them they way they should. They are typically loaded with butter, bacon, sour cream, and other fattening foods. Sigh, so much disappointment.
Until this recipe. Parsnips on the other hand are a vegetable and very healthy. So many benefits inside this wonderful little food. And they taste almost just like potatoes.
Ingredients:
- 2 lbs parsnips
- 1 teaspoon honey
- 1 teaspoon salt
- 1/2 cup butter or coconut oil
- 1/2 cup mayonnaise
- 2 teaspoons minced garlic
- Cheese or cheese alternative to taste
First thing to do is peel your parsnips.
Chop off the ends and chop the parsnips into 1 inch cubes.
Next, boil a large pot of water.
Boil the parsnips for 25 minutes or until soft. Raw parsnips have a dark ring around the inside that make them look almost like a banana. You'll know when they're cooked because the dark ring gets so light it almost goes away.
Drain the water and put the cooked parsnips in a big bowl. Mix together the mayo, butter, garlic, and salt. Pour it over the parsnips and mash or blend with a hand blender.
Stir in the cheese and mix until it's all melted.
Done! They're that easy! Might not be the most visually pleasing, but once you take a bite you won't be able to stop! Enjoy!
