2 Ingredient Summer Fresh Ice Cream

After a long break, I'm finally back blogging again! This past month has been crazy trying to get everything in order with my classes, exams, and future university! But now I'm back with an amazing 2 ingredient health ice cream recipe that you will love this summer.

Ingredients:
  • 1 cup frozen strawberries
  • 2 kiwis

This is probably the easiest recipe ever. Currently, I'm still vegan. The hardest part is definitely when my sweet tooth kicks in and I get a craving for ice cream. Luckily, this recipe is around during those times.

First, I cut up my kiwi into cubes and put them in the freezer for about 30-45 minutes. This allows them to get chilled, but not frozen solid in order to add more creaminess to the ice cream.

Throw everything in the blender and pulse until smooth and creamy. If you prefer, add some extra sweetener. A drop of stevia, some maple syrup, or a drizzle of honey would be delicious with this since fruit loses a bit of its sweetness once it's been frozen. However, I really like the bit of tartness.

I hope you enjoy this recipe and have a wonderful week!
