Vegan Chicken Salad Wrap

So my cleanse is over! But, I've decided to stick with a vegan lifestyle, at least for awhile! This is definitely a huge lifestyle change for me and giving up dairy has been especially difficult. The cheese cravings are legit.

While I have never been particularly fond of meat, my weakness was always a chicken salad wrap. Obviously, you can't have chicken if your vegan... I also decided to give up corn, soy, cane sugar, and gluten. That makes it kind of hard to find even a gluten free wrap around here! But don't worry. Over the weekend, I spent some time in the kitchen and let those creative juices flow. Luckily, I came up with a vegan chicken salad wrap that's just as delicious as the real thing!

Ingredients:
  • 2 romaine leaves 
  • 1/2 cup mixed greens
  • 1 tomato
  • 1/4 cup sprouts
  • 1/4 cup chickpeas
  • 1/2 carrot
  • 1/2 apple
  • 1 teaspoon yellow mustard
  • 1/2 avocado
  • Sea salt
  • Optional: onion, celery, herbs, favorite dressing...etc.
















To start off this plant based delicacy, you'll need to prepare two romaine leaves from fresh romaine hearts. These make a perfect plant based wrap! Then, I added 1/2 cup chopped spring mixed greens. Cut up your tomato and add your favorite sprouts for a crunchy texture. Some people don't enjoy sprouts, but I am not one of those people! I love sprouts so much. I added mixed clover and radish sprouts to this wrap, but you can always leave the sprouts out if you prefer.




















Now for the "chicken" salad part. Mash the chickpeas together with the carrot, apple, mustard, and sea salt. Since I had so many veggies already on the wrap, I didn't put as many ingredients in my chickpea salad. But, feel free to add extra veggies or fruits like grapes, celery, or even fresh herbs.
















Top your wrap with avocado and a drizzle of olive oil, lemon juice, your favorite dressing, or just enjoy as is! This wrap really hits the spot. It's filling and a great plant based recipe that won't leave you feeling hungry!
